Cherry Balsamic Pork Chops 

Pretty simple dinner for 2. Add ingredients if you want to make prep or have more than 2. Decrease either amount of pork chop, couscous or 1/2 the butter if you need to decrease any macronutrients!

12 oz uncooked, Raw Pork Chop 8 oz, Broccoli 2 TBSP, Butter Salted 1 TBSP, stock concentrate chicken 0.50 cup, Couscous, Uncooked (From Calorie Count) 1, Shallot 5 TBSP, Vinegar 2 TBSP, Cherry Jam Olive oil spray *Salt and pepper to taste.

  WHAT NOW?

Preheat oven to 450. Mince shallot. Cut broccoli into about 1-inch pieces. Melt 1 TBSP of butter in couscous pot. Add 1/2 of shallots. Brown for 2-3:00 minutes. Add 3/4 cup of water and 1/2 chicken stock concentrate with a pinch of salt. Bring to a boil and add couscous. Cover and remove from heat. Toss broccoli on a baking sheet with a spray of olive oil, salt, and pepper to taste. Roast for 10-15:00. Pat pork dry, spray with oil add salt and pepper. Cook over medium/high until cooked through about 5:00 per side. For the sauce: spray the pan with oil over medium heat cook remaining shallots until brown. Add vinegar and simmer for 0:30. Add jam, 1/3 cup of water and remaining chicken stock. Cook for 3-5:00, season with salt and pepper. Turn off heat and stir in remaining butter (1TBSP). Return pork to pan and coat. Plate the yumminess!
